Tip Tuesday - Irish Cupcakes!
You can tell that I’m Irish by looking at me. Translucent skin, reddish hair and green eyes - I’m a lass straight out of the old country! Which brings me to St. Patrick’s Day - the day when the world goes Irish in bars all around the country. Wanna celebrate in style? Make some Irish Cupcakes to share with your friends and family - Sláinte!

Ingredients
Cake:
* 1 cup Guinness
* 1 stick, plus 1 tb, unsalted butter
* 3/4 cup unsweetened cocoa
* 2 cups dark brown sugar
* 3/4 cup sour cream
* 2 eggs
* 1 tb vanilla extract
* 2 cups flour
* 2 1/2 tsp baking soda
Frosting:
* 2 cups of confectioners sugar
* 2 sticks butter
* Splash of Baileys and Jameson
* Splash of vanilla extract
Instructions
1. Preheat oven to 350 degrees and line cupcake pans (recipe makes 20 - 24)
2. Sift together flour, baking soda and cocoa
3. Create Guinness sauce - add butter, sliced into 1 tsp chunks, into the cup of Guinness to a skillet or sauce pot. Then add brown sugar and reduce 1/4 (boil for 4 - 5 minutes). You will have to watch so it doesn’t boil over!
4. Whisk eggs, sour cream and vanilla. Add to Guinness sauce.
5. Mix everything together well - don’t forget to scrape the sides of the bowl down as you mix!
6. Bake for 12 - 15 minutes - checking after 10 minutes (done means putting a toothpick in and it coming out clean)
7. Set aside to cool and start on the frosting.
8. Whip 2 sticks of butter (at room temperature - leave out for at least an hour) and 2 cups of powdered/confectioners sugar.
9. Add a splash of both Bailey’s and Jameson plus a splash of vanilla extract
10. Frost your cupcakes - let them cool COMPLETELY before you do this. Otherwise, you’ll have melted frosting (it’s butter dude!)
